Subject: [PATCH] docs: point the library snippets at the 8.x lib

v8.0.0 is on crates.io, so the Cargo.toml examples in the readme and on the
install page were a major behind.

Replace the 5.x upgrade note with one that does not name a version, so it
stops going stale every release.
