docs: use the wordmark at the top of the README
The mark is a glyph; the wordmark reads "soulseek-rs" outright, which is what a README header wants. Both tones ship so prefers-color-scheme can pick one. Named for the background they sit on rather than their Figma tone, because the existing logo-ink/logo-light pair means the opposite of what it sounds like.
